I've been complimented on my recipe when I bake my HEALTHY, SCRUMPTIOUS Pumpkin Spice Muffins so I thought I'd share... Well, here it is:
1.) First take a box of Duncan Hines Spice Cake Mix
2.) Then take one 15 ounce can of 100% pure Pumkin (REAL pumpkin... NOT pumpkin pie filler)
3.) Then mix those TWO ingredients together in a large bowl.
4.) Then, take paper muffin cups and lightly spray them in the trays with your favorite cooking spray (so that the muffins won't stick to the paper when you try to eat them)
5.) Fill each cupcake cup in sloppy glops of the mixture to about the top of the muffin cup
6.) Follow baking instructions on the back of the cake mix box (something like 350 degrees for x-amount of minutes).
7.) Remove from oven when they bounce back and slightly firm when you touch the top (time on the box is usually accurate - but ovens vary).
8.) Serve and enjoy!
Be careful... these contain LOTS of fiber because of the real pumpkin! Weight Watchers used to be 1 point for these - not sure how that would be counted now! =0D
**Usually yields about 15 muffins (only one pan shown here, but I used a small pan to make 3 more!)
